Initial cooking temperatures for the following foods must meet the heating temperature requirements listed:

 

  • Fish, Lamb, Eggs and Beef - Heated thoroughly to 145 degrees F
  • Rare Roast Beef - Heated thoroughly to 130 degrees F
  • Pork and Ground Meats (Hamburger, meat loaf, meatballs) - Heated thoroughly to 155 degrees F
  • Poultry and Stuffed Foods - Heated thoroughly to 165 degrees F
  • Reheating Foods - Heated thoroughly to 165 degrees F
